This author's goal seems to be how can I really bring out the best in these vegetables, or rice, or soups, or breads? Jay Solomon's "Vegetarian Rice Cuisine", on the other hand, seems to be how can I make so and so dish, but with rice? So, I try his tomato soup thickened with Do you see the difference in approaches to vegetarian cookbooks?

Excellent recipes from authentic Indian cookery with ingredients which can be easily sourced in the USA. Highly recommended for any cook, but especially vegetarian. I just wish there were photos to make me hungry enough to try asap. This rating may go up based on the deliciousness of the resulting dishes.
